Toast To Avocado

At STRIVE with Janelle we’re always trying new recipes. But we also like to recreate dishes we discover from our favorite local spots. Like this Avocado Toast. We’ve had a variation of this fresh find from a few different places around Las Vegas, and each time we think “we can do something like this”…so we did!

We love this recipe because it’s so all-purpose! The delicious blend of complex carbs and protein, plus a smattering of veggies makes it great for breakfast, lunch or even a quick snack! It can also be catered to your individual tastes. It keeps us nice and full too!

What you’ll need: (serves 2)

2 slices whole grain bread

2 Roma tomatoes, sliced thin

2 radishes, sliced thin

¾ cup guacamole or smashed avocado

¼ cucumber, sliced thin

¼ white onion, sliced into quarter moons

¾ cup shredded lettuce or sprouts

Unlike many of the toys you may get your kids this holiday season, assembly is so easy!

  • Evenly spread guacamole or avocado across your two slices of bread
  • Layer sliced tomatoes, cucumbers, radishes and onions
  • Top with lettuce or sprouts

Voila! A healthy and delicious choice you can whip up any time. You can alter this with different veggies or toppings like capers, celery or even hot sauce.
